.INGREDIENTS

Turn oven on to 180c & line a oven safe baking dish

200gm Pumpkin Shredded

100gm Kohlrabi Shredded

1 Spring Onion Diced

1 Tablespoon Of Chopped Fresh Parsley

2 teaspoons Of Nutritional Yeast

6 Free Range Eggs

2 Tablespoons of Coconut Flour

1/2 Tin Coconut Milk

1 Tomato Thinly Sliced

Salt & Pepper Taste

METHOD

Whisk all ingredients except the tomato, together in a bowl and pour into the backing dish.

Layer the sliced tomato on top of mixture and sprinkle some more nutritional yeast over the top.

Place in oven for 35-40 mins or until firm in the middle

SUGGESTIONS

Try using different veggies like broccoli and zucchini with mint

or sweet potato and carrot with coriander

Great for any meal with a salad or roasted veggies

Can eat cold and goes well in lunch boxes
